Method
 

  1. In your microwave-safe mug, add the flour, sugar, baking powder, and salt. Whisk together with a fork until well combined and no lumps remain.
  2. Pour in the milk, vegetable oil, and vanilla extract into the mug.
  3. Using your fork or whisk, mix the wet and dry ingredients together until just combined. Be careful not to overmix!
  4. If you're adding chocolate chips, blueberries, or nuts, gently fold them into the batter now.
  5. Place the mug in the microwave and cook on high for 1 to 2 minutes. Start with 1 minute and check for doneness. The muffin is ready when it’s puffed up and slightly firm. Important: Microwaves vary. Start with 1 minute and increase in 15-second intervals. Watch carefully to prevent overflow!
  6. Let the muffin cool in the mug for a minute or two before enjoying. Be careful, it will be hot! Eat from the mug or invert onto a plate.

Notes

For a gluten-free version, use a 1-to-1 gluten-free flour blend. Dairy-free? Use almond, soy, or oat milk. Vegan? Use plant-based milk and vegan sugar. Don't overmix the batter for a tender muffin. Microwave wattages vary, so adjust cooking time accordingly. Best enjoyed fresh and warm!
