Method
- In your microwave-safe mug, add the flour, sugar, baking powder, and salt. Whisk together with a fork until well combined and no lumps remain.
- Pour in the milk, vegetable oil, and vanilla extract into the mug.
- Using your fork or whisk, mix the wet and dry ingredients together until just combined. Be careful not to overmix!
- If you're adding chocolate chips, blueberries, or nuts, gently fold them into the batter now.
- Place the mug in the microwave and cook on high for 1 to 2 minutes. Start with 1 minute and check for doneness. The muffin is ready when itβs puffed up and slightly firm. Important: Microwaves vary. Start with 1 minute and increase in 15-second intervals. Watch carefully to prevent overflow!
- Let the muffin cool in the mug for a minute or two before enjoying. Be careful, it will be hot! Eat from the mug or invert onto a plate.
Notes
For a gluten-free version, use a 1-to-1 gluten-free flour blend. Dairy-free? Use almond, soy, or oat milk. Vegan? Use plant-based milk and vegan sugar. Don't overmix the batter for a tender muffin. Microwave wattages vary, so adjust cooking time accordingly. Best enjoyed fresh and warm!
