- If using wooden skewers, soak them in water for at least 30 minutes.
- In a medium bowl, combine the chicken cubes, olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper. Toss well to coat.
- Thread the seasoned chicken onto the skewers, leaving a small space between each piece. Do not overcrowd.
- Preheat your air fryer to 400°F (200°C).
- Place the skewers in a single layer in the air fryer basket. Cook in batches if needed. Air fry for 10-14 minutes, flipping halfway, until the chicken is golden brown and cooked through (internal temperature reaches 165°F or 74°C).
- While the chicken cooks, prepare the sauce. Melt the butter in a small saucepan over medium heat. Add the minced garlic and cook until fragrant, about 30-60 seconds.
- Remove the pan from the heat and stir in the grated Parmesan cheese and chopped parsley until the cheese is melted.
- Place the cooked skewers in a large bowl, pour the sauce over them, and toss to coat. Serve immediately.
