The Crust
  • 2 cups (200g) Graham cracker crumbs Visible crumbs preferred
  • 1/2 cup (115g) Unsalted butter Melted
  • 2 tbsp (25g) Granulated sugar
The Peanut Butter Mousse
  • 8 oz (225g) Cream cheese Full-fat, room temperature
  • 1 cup (250g) Creamy peanut butter Standard processed type
  • 1 1/2 cups (180g) Powdered sugar
  • 1 cup (240ml) Heavy whipping cream Whipped to stiff peaks
Topping & Garnish
  • 1 cup (240ml) Heavy whipping cream Cold
  • 2 tbsp (15g) Powdered sugar
  • 1/4 cup (45g) Semi-sweet chocolate chips Garnish
  • 1/4 cup (45g) Mini peanut butter chips Garnish
  • 2 tbsp (30ml) Dark chocolate sauce For drizzle

Equipment

  • 1 9-inch deep-dish pie plate
  • 1 Electric hand mixer
  • 1 Rubber Spatula

Method
 

Prepare the Crust
  1. Combine graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch pie plate.
  2. Place in freezer for 15 minutes to set.
Make the Filling
  1. Beat cream cheese, peanut butter, and powdered sugar until smooth and matte tan.
  2. Whip 1 cup of heavy cream to stiff peaks and gently fold into the peanut butter base. Spread into crust.
Decorate and Chill
  1. Whip the remaining heavy cream and powdered sugar. Pile onto the pie.
  2. Sprinkle with chocolate and peanut butter chips. Apply a thin dark chocolate drizzle.
  3. Refrigerate for at least 4 hours before slicing.
