- In a large serving bowl, combine the halved tomatoes, chopped cucumber, and thinly sliced red onion. Sprinkle lightly with a pinch of the sea salt and toss gently. Let it sit for 5-10 minutes.
- In a small bowl or a jar with a lid, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, sea salt, and black pepper until combined.
- Add the pitted Kalamata olives to the vegetable mixture. Pour the dressing over the salad and toss gently to coat all the ingredients well.
- Carefully place the entire block of feta cheese on top of the salad. Drizzle the top of the feta with a little extra olive oil and a sprinkle of more dried oregano. Serve immediately.
