  • 1 lb (450g) Ground Beef 80/20 lean-to-fat ratio
  • 1/2 lb (225g) Ground Pork Sausage Mild or Hot
  • 1/2 cup (60g) Sharp Yellow Cheddar Cut into 1/2-inch chunks
  • 1/4 cup (60g) Cooked Bacon Bits Crispy and cooled
  • 4 slices Sharp Yellow Cheddar For melting on top
  • 12 strips Smoked Bacon Cooked until wavy and crispy
  • 4 large Eggs For frying with runny yolk
  • 1/2 cup (120ml) Ranch Dressing Thick buttermilk style
  • 4 Brioche Buns Seeded with white sesame

Equipment

  • 1 Cast Iron Skillet For searing the patties
  • 1 Non-stick skillet For frying the eggs
  • 1 Metal Spatula For flipping heavy burgers

Method
 

Preparation
  1. Gently fold ground beef, sausage, cheddar chunks, and bacon bits together. Form into 4 thick patties.
  2. Season the exterior of the patties generously with salt and pepper.
Cooking
  1. Sear patties in a hot cast iron skillet for 4-5 minutes per side until a dark brown crust forms. Add cheddar slices in the last minute.
  2. In a separate pan, fry eggs until the whites are set but the yolk remains runny and glistening.
Assembly
  1. Place patty on a toasted bun. Add 3 crisscrossed bacon strips, one fried egg, and a drizzle of ranch dressing. Top with the seeded bun.
