- Preheat oven to 400°F (200°C). Line a large baking sheet with foil and place an oven-safe wire rack on top.
- Cut the bacon slices into thirds.
- Thoroughly pat the water chestnuts dry with paper towels. Wrap one piece of bacon around each water chestnut and secure with a toothpick.
- Place the wrapped water chestnuts on the wire rack in a single layer.
- Bake for 15-20 minutes to partially cook the bacon.
- While they are baking, whisk together the brown sugar, soy sauce, and garlic powder in a small bowl to create the glaze.
- Remove the baking sheet from the oven and brush the glaze over all sides of the bacon wrapped water chestnuts.
- Return to the oven and bake for an additional 10-15 minutes, or until the bacon is crispy and the glaze is bubbly and caramelized.
- Let cool for a few minutes before serving, as the glaze will be very hot.
