- Peel the firm banana and slice it into 1-inch (2.5cm) thick bite-sized rounds.
- Using a small spatula, thickly coat the outer circular edge of each banana round with creamy peanut butter.
- Mix the chia seeds and finely crushed peanuts in a shallow dish. Roll the peanut butter-coated edges through the mixture to create a thick crust, then lay the slices flat on a plate.
- Place the small diced fresh strawberries and whole tiny blueberries neatly on top of the exposed flat surface of each banana slice.
- Melt the dark chocolate chips with the coconut oil. Transfer to a piping bag and create a light zigzag drizzle across the top of the arranged fruit.
