Preparation
- Place the mandarin oranges and crushed pineapple in a fine-mesh strainer. Let sit for 15-20 minutes, pressing gently on the pineapple to remove all excess liquid.
- In a large bowl, whisk together the whipped topping and sour cream until smooth and cloud-like.
- Gently fold in the drained oranges, pineapple, 1.5 cups of marshmallows, and 1/2 cup of coconut using a rubber spatula. Do not overmix.
- Cover and refrigerate for at least 2 hours to allow the marshmallows to soften and the structure to set.
- Before serving, sprinkle the remaining coconut on top and place three maraschino cherries in the center.
