Preparation and Roasting
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Slice the jalapenos in half lengthwise and carefully scrape out the seeds and membranes using a melon baller.
- Place the hollowed halves on the baking sheet. Brush lightly with olive oil and sprinkle evenly with kosher salt and black pepper. Roast for 10 minutes until the skin is slightly blistered and charred. Remove from oven.
- Stuff each blistered pepper cavity with cubes of creamy white brie cheese. Top the cheese with small clusters (3-4) of fresh dark purple blueberries.
- Return to the oven for 8 to 10 minutes until the brie cheese is thick, gooey, and fully melted, and the blueberries are soft and slightly roasted.
- Transfer the hot poppers to a serving plate. Drizzle with translucent amber honey and sprinkle with fresh green thyme leaves before serving.
