Preparation and Roasting
- Preheat oven to 400°F (200°C). Slice jalapeños lengthwise and remove seeds. Toss with olive oil and salt.
- Place peppers cut-side down on a baking sheet. Roast for 8-10 minutes until skins show light charred blister marks.
Filling and Finishing
- Flip peppers over. Fill each cavity with a thick rectangle of Brie cheese.
- Place three whole blueberries on top of the Brie in each popper, pressing down slightly.
- Bake for 4-5 minutes until the cheese is gooey and blueberries are plump and glossy.
- Arrange on a plate. Drizzle with amber honey and scatter fresh thyme leaves over the top.
