Blueberry Brie Jalapeño Poppers with Honey and Thyme

  • 12 whole Jalapeño peppers halved and seeded
  • 8 oz Brie cheese 225g, sliced into rectangles
  • 1 cup Fresh blueberries 150g, plump and whole
  • 2 tbsp Honey 30ml, amber colored
  • 1 tbsp Fresh thyme leaves 4g, stripped from stems
  • 1 tbsp Extra virgin olive oil 15ml, for roasting
  • 1 pinch Sea salt To taste

Equipment

  • 1 Rimmed Baking Sheet Used for roasting and blistering the peppers.
  • 1 Paring Knife Essential for cleaning the jalapeños.

Method
 

Preparation and Roasting
  1. Preheat oven to 400°F (200°C). Slice jalapeños lengthwise and remove seeds. Toss with olive oil and salt.
  2. Place peppers cut-side down on a baking sheet. Roast for 8-10 minutes until skins show light charred blister marks.
Filling and Finishing
  1. Flip peppers over. Fill each cavity with a thick rectangle of Brie cheese.
  2. Place three whole blueberries on top of the Brie in each popper, pressing down slightly.
  3. Bake for 4-5 minutes until the cheese is gooey and blueberries are plump and glossy.
  4. Arrange on a plate. Drizzle with amber honey and scatter fresh thyme leaves over the top.
