Method
- Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish. In a large skillet, cook the ground sausage over medium-high heat until browned. Drain excess grease.
- Place the cubed bread in an even layer in the prepared baking dish. Top with the cooked sausage and 1 cup of the shredded cheese.
- In a large bowl, whisk together the eggs, milk, dry mustard powder, salt, and pepper until fully combined.
- Pour the egg mixture evenly over the layers in the baking dish. Sprinkle the remaining 1 cup of cheese on top. For best results, cover and refrigerate overnight, or for at least 4 hours.
- If refrigerated, let the dish sit at room temperature for 20 minutes before baking. Bake uncovered for 45-55 minutes, until the center is set and the top is golden brown.
- Let the casserole rest for 10 minutes before slicing and serving warm.

Notes
Tip 1: Using day-old, dry bread is the key to preventing a soggy casserole. If your bread is fresh, toast the cubes in the oven at 350°F for 10-15 minutes.
Tip 2: Don't be afraid to customize! Add a cup of sautéed vegetables like onions, bell peppers, or mushrooms for extra flavor and nutrition.
