  • 1 lb ground breakfast sausage
  • 6 cups day-old bread, cubed Sturdy bread like sourdough or French bread works best
  • 10 large eggs
  • 3 cups whole milk
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 tsp dry mustard powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish. In a large skillet, cook the ground sausage over medium-high heat until browned. Drain excess grease.
  2. Place the cubed bread in an even layer in the prepared baking dish. Top with the cooked sausage and 1 cup of the shredded cheese.
  3. In a large bowl, whisk together the eggs, milk, dry mustard powder, salt, and pepper until fully combined.
  4. Pour the egg mixture evenly over the layers in the baking dish. Sprinkle the remaining 1 cup of cheese on top. For best results, cover and refrigerate overnight, or for at least 4 hours.
  5. If refrigerated, let the dish sit at room temperature for 20 minutes before baking. Bake uncovered for 45-55 minutes, until the center is set and the top is golden brown.
  6. Let the casserole rest for 10 minutes before slicing and serving warm.
