  • 12 slices (340g) Thick-cut Bacon Cooked until dark brown and crumbled
  • 1.5 cups (170g) Sharp Orange Cheddar Cheese Cubed into small squares
  • 0.5 medium (60g) Red Onion Thinly sliced into purple slivers
  • 1 cup (240ml) Mayonnaise Full fat for best gloss
  • 2 tbsp (30ml) Apple Cider Vinegar
  • 3 tbsp (38g) Granulated Sugar
  • 0.5 tsp (3g) Salt and Black Pepper To taste

Method
 

Preparation
  1. Place bacon in a cold skillet over medium heat. Cook until the fat has rendered and the bits are a deep, dark brown and audibly crispy. Drain on paper towels.
  2. Wash and dry broccoli thoroughly. Cut into small, uniform florets. Slice the red onion into paper-thin purple slivers and cube the cheddar into small pieces matching the bacon bits.
  3. In a separate bowl, whisk together the mayonnaise, sugar, apple cider vinegar, salt, and pepper until the mixture is thick, glossy, and opaque white.
  4. Add the broccoli, bacon, cheese, and onion to a large bowl. Pour the dressing over and fold gently until every piece is saturated. Let sit in the fridge for 30-60 minutes to allow the dressing to pool slightly at the bottom.
