Ingredients
  

  • 1 medium butternut squash (about 3 lbs) peeled, seeded, and cut into 1-inch cubes
  • 3 tbsp unsalted butter melted
  • 3 tbsp light brown sugar packed
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the cubed butternut squash, melted butter, brown sugar, cinnamon, salt, and pepper. Toss well until the squash is evenly coated.
  3. Spread the seasoned squash in a single layer on the prepared baking sheet. Ensure the pieces are not overcrowded to allow for proper roasting.
  4. Roast for 25-30 minutes, flipping halfway through, until the squash is tender and the edges are beautifully caramelized.
  5. Serve immediately and enjoy!
