  • 1 box (18oz/510g) Chocolate Brownie Mix Fudge or dark chocolate variety recommended.
  • 2 large Eggs Room temperature.
  • 1/2 cup (115g) Unsalted Butter Melted and slightly cooled.
  • 1/4 cup (30g) All-Purpose Flour To thicken the dough.
  • 1 tsp (5ml) Vanilla Extract
  • 1 tbsp (15g) Coarse Sea Salt Flakes For topping.

Equipment

  • 1 Large Cookie Scoop 3-tablespoon capacity for thick cookies.
  • 2 Baking Sheet Heavy-duty for even heat distribution.
  • Parchment Paper To prevent sticking.

Method
 

Prepare the Base
  1. In a large bowl, whisk eggs and vanilla for 2 minutes until frothy. This creates the glossy top.
  2. Whisk in the melted butter until fully emulsified.
Form the Dough
  1. Fold in brownie mix and extra flour with a spatula until a thick chocolate brownie dough forms.
  2. Use a 3-tbsp scoop to place mounds of dough on a parchment-lined sheet.
Bake to Perfection
  1. Sprinkle with sea salt flakes. Bake at 350°F (175°C) for 10-12 minutes until edges are set.
  2. Allow to cool on the pan for 10 minutes to let the glossy cracked top crust fully develop.

Notes
