- In a bowl, toss the shredded chicken with buffalo sauce until every piece is coated in a glossy orange layer.
- Layer half of both cheeses on one sourdough slice, top with the buffalo chicken and scallions, then add the remaining cheese and the top bread slice.
- Butter the outer sides of the bread and grill in a skillet over medium-low heat for 3-4 minutes per side until deep golden brown and the cheese is oozing.
