  • 4 cups powdered sugar sifted
  • 2 tablespoons heavy cream or half-and-half
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon vanilla extract
  • 1-2 drops gel food coloring optional

Method
 

  1. In a large mixing bowl, beat the softened butter with an electric mixer until light and fluffy, about 1-2 minutes.
  2. Add the heavy cream, peppermint extract, and vanilla extract. Beat on low speed until combined. If using, add food coloring and mix until uniform.
  3. With the mixer on low, gradually add the sifted powdered sugar, one cup at a time, mixing until fully incorporated before adding more. The mixture will form a soft dough.
  4. Turn the dough out onto a surface lightly dusted with powdered sugar and knead gently for 30 seconds until smooth.
  5. Divide the dough and roll each portion into a 1/2-inch thick rope. Cut the rope into 1/2-inch pieces.
  6. Place the mints in a single layer on a parchment-lined baking sheet. Let them air dry at room temperature for 12-24 hours to set.
