Caprese Pasta Salad with Balsamic Glaze and Fresh Basil

Main Ingredients
  • 1 lb Rotini Pasta 454g, cooked al dente
  • 2 cups Cherry Tomatoes 300g, halved
  • 8 oz Mozzarella Pearls 225g, drained
  • 1 cup Fresh Basil Leaves 30g, torn and whole
  • 1/3 cup Extra Virgin Olive Oil 80ml, high quality
  • 2 tbsp Balsamic Glaze 30ml, thick reduction
  • 1 tsp Kosher Salt To taste

Equipment

  • 1 Large stockpot For boiling pasta
  • 1 Shallow Ceramic Bowl For rustic plating

Method
 

Cook the Pasta
  1. Boil rotini in salted water for 8-10 minutes until al dente.
  2. Drain and spread on a baking sheet to cool slightly and stop the cooking process.
Assemble the Salad
  1. Toss the warm pasta with olive oil until it has a shimmering coating.
  2. Fold in the halved cherry tomatoes, mozzarella pearls, and salt.
  3. Transfer to a bowl and top with fresh basil leaves and a thick drizzle of balsamic glaze.
