Ingredients
  

Cherry Filling
  • 4 cups pitted fresh sweet cherries OR 2 (21-ounce) cans cherry pie filling
  • 0.5 cup granulated sugar For fresh cherries
  • 2 tbsp cornstarch For fresh cherries
  • 1 tbsp lemon juice For fresh cherries
Cobbler Topping
  • 1.5 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 6 tbsp cold unsalted butter cubed
  • 0.75 cup milk
  • 1 tbsp coarse sugar for sprinkling

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. If using fresh cherries, toss them in a large bowl with 1/2 cup sugar, cornstarch, and lemon juice. If using canned filling, spread it evenly in the prepared dish.
  3. In a separate bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk until a soft dough forms.
  4. Drop spoonfuls of the topping over the cherry filling. Sprinkle with coarse sugar.
  5. Bake for 35-45 minutes, until the filling is bubbly and the topping is golden brown.
  6. Let the cobbler cool for at least 15 minutes before serving warm, preferably with a scoop of vanilla ice cream.

Notes

For a flaky topping, ensure your butter is very cold.
