Ingredients

For the Pasta
  • 1 lb Penne Pasta or other short pasta
  • 1 lb Boneless, skinless chicken breasts cut into 1-inch cubes
  • 8 slices Thick-cut bacon chopped
  • 2 tbsp Butter
  • 3 cloves Garlic minced
  • 1/2 cup Chicken broth
  • 1 1/2 cups Heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 1/2 cup Shredded cheddar cheese for topping
  • 2 tbsp Fresh parsley chopped, for garnish
For the Homemade Ranch Seasoning
  • 1 tbsp Dried Parsley
  • 1 tsp Dried Dill
  • 1 tsp Dried Chives
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Equipment

  • 1 Large Pot
  • 1 Large Skillet

Method

  1. Cook Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
  2. Cook Bacon and Chicken: In a large skillet over medium heat, cook chopped bacon until crispy. Remove bacon with a slotted spoon, leaving 1 tbsp of grease. Add cubed chicken, season, and cook until golden brown. Set aside with bacon.
  3. Mix Ranch Seasoning: In a small bowl, combine all ingredients for the homemade ranch seasoning.
  4. Make the Sauce: In the same skillet, melt butter. Sauté minced garlic for 30 seconds. Deglaze with chicken broth. Stir in heavy cream and the ranch seasoning mix. Bring to a simmer.
  5. Combine: Reduce heat to low. Stir in Parmesan cheese until the sauce is smooth. Return chicken and bacon to the skillet. Add the drained pasta and toss to coat, adding reserved pasta water if needed to reach desired consistency.
  6. Serve: Top with shredded cheddar cheese and fresh parsley. Serve immediately.

Notes

Use Freshly Grated Cheese: For the smoothest sauce, avoid pre-shredded cheeses which can contain anti-caking agents.
Reserve Pasta Water: Don't forget to save some starchy pasta water! It's the key to adjusting your sauce to the perfect consistency.
