  • 1.5 lbs (680g) Chicken Breast Cut into thin strips
  • 3 tbsp (45ml) Extra Virgin Olive Oil
  • 2 tbsp (30ml) Lemon Juice Freshly squeezed
  • 1 tbsp (5g) Dried Oregano
  • 3 cloves Garlic Mincied
The Base & Toppings
  • 1.5 cups (300g) Long-Grain White Rice Rinsed thoroughly
  • 2 large Persian Cucumbers Sliced into rounds
  • 1 cup (150g) Cherry Tomatoes Halved
  • 0.5 small Red Onion Thinly slivered
  • 0.5 cup (75g) Kalamata Olives Pitted
  • 0.5 cup (75g) Feta Cheese Crumbled
  • 0.75 cup (180ml) Tzatziki Sauce Thick, Greek-style
  • 4 sprigs Fresh Dill For garnish

Equipment

  • 1 Cast Iron Skillet or Grill Pan Used to achieve deep char marks on the chicken strips.
  • 1 Fine-mesh sieve Essential for rinsing rice to ensure fluffiness.

Method
 

Prepare the Grains
  1. Rinse rice under cold water until clear. Combine with 2.25 cups water and salt in a pot. Bring to boil, then simmer covered for 15-18 minutes. Let rest for 5 minutes then fluff.
Cook the Chicken
  1. Toss chicken strips with oil, lemon, garlic, and herbs. Heat a grill pan over medium-high. Sear chicken for 4-5 minutes per side until dark brown char marks appear.
Bowl Assembly
  1. Layer rice in bowls. Arrange chicken, cucumbers, halved tomatoes, onion slivers, and olives on top. Add a dollop of tzatziki in the center, sprinkle with feta, and garnish with dill.
