  • 1 large head broccoli cut into florets
  • 2 bell peppers any color, chopped
  • 1 red onion cut into wedges
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 12 oz pre-cooked chicken sausage sliced into 1/2-inch rounds

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper.

  3. Drizzle the vegetables with olive oil. Sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss well to ensure everything is evenly coated.
  4. Spread the seasoned vegetables in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two if necessary.
  5. Roast for 15 minutes in the preheated oven.
  6. Remove the pan from the oven and add the sliced chicken sausage. Gently toss with the vegetables.
  7. Return the pan to the oven and roast for an additional 15-20 minutes, or until the vegetables are tender and caramelized, and the sausage is heated through.
