  • 1 lb Chicken Breasts 450g, boneless skinless
  • 1 tbsp Olive Oil 15ml
  • 2 cups Heavy Cream 480ml
  • 4 tbsp Unsalted Butter 56g
  • 1 cup Parmesan Cheese 90g, finely grated
  • 3 cups Baby Spinach 90g, fresh
  • 1/4 cup Fresh Parsley Chopped flakes for garnish

Equipment

  • 1 Large Pot For boiling pasta
  • 1 Stainless Steel Skillet For searing chicken and making sauce
  • 1 Microplane or Grater For finely grated parmesan
  • 1 Tongs For tossing pasta

Method
 

Cook the Pasta
  1. Cook penne in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining.
Sear the Chicken
  1. Season chicken and sear in a hot skillet with oil for 5-6 mins per side until golden-brown grill marks appear. Slice into thick strips.
Create the Sauce
  1. Melt butter in the skillet, add cream and simmer. Whisk in parmesan until a glossy white sauce forms.
Assemble
  1. Toss pasta and spinach into the sauce. Top with chicken slices, more parmesan, and parsley flakes.
