  • 1.5 lbs Boneless Skinless Chicken Thighs Cut into cubes after grilling
  • 2 tbsp Chipotle Peppers in Adobo Finely minced
  • 1.5 cups Long-Grain White Rice Rinsed thoroughly
  • 1 can Black Beans 15oz, rinsed and drained
  • 2 cups Corn Fresh or frozen
  • 1 small Red Onion Finely minced
  • 2 large Avocados Ripe
  • 3 medium Roma Tomatoes Diced

Equipment

  • 1 Cast Iron Skillet Essential for achieving charred edges on chicken.
  • 1 Fine-mesh strainer To rinse rice for maximum fluffiness.

Method
 

Prepare the Components
  1. Rinse rice until water is clear. Boil in 3 cups of water, then simmer covered for 15 minutes. Fluff and mix with cilantro and lime.
  2. Coat chicken in adobo sauce and spices. Sear in a hot skillet for 5-7 minutes per side until charred and cooked through. Cube after resting.
  3. Char corn in a dry pan. Mix with red onion and lime. Mash avocados for guacamole and dice tomatoes for pico de gallo.
