  • 6 cups (500g) broccoli florets cut into small, bite-sized pieces
  • 8 slices (225g) thick-cut bacon cooked until crispy and crumbled
  • 1/2 cup (60g) red onion thinly sliced into half-moons
  • 1/2 cup (60g) dried cranberries plump and sweet
  • 1/3 cup (45g) sunflower seeds toasted
  • 1 cup (240ml) mayonnaise high-quality
  • 2 tbsp (30ml) apple cider vinegar
  • 3 tbsp (38g) granulated sugar
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) black pepper freshly cracked

Equipment

  • 1 Large white ceramic bowl Used for mixing and serving.
  • 1 Heavy-bottomed Skillet For crisping the bacon.
  • 1 Whisk To emulsify the dressing.

Method
 

Preparation
  1. Place bacon in a cold skillet over medium heat. Render until crispy brown and deep mahogany in color. Drain on paper towels and crumble.
  2. Cut broccoli into small vibrant green florets. Slice red onion into thin purple half-moons.
  3. In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until thick, creamy, and glossy.
  4. In a large white bowl, combine broccoli, bacon, onion, cranberries, and sunflower seeds. Pour dressing over and toss until thoroughly coated.
