Prepare and Sear

- Heat oil in an oven-safe skillet. Sear pork for 3-4 minutes per side until a deep golden-brown crust forms.
Glaze and Roast
- Whisk Coca-Cola, brown sugar, and soy sauce. Pour into the skillet, scraping the bottom for flavor.
- Add carrots to the pan. Baste the pork. Roast in the oven for 45-60 minutes, basting every 15 minutes until internal temp is 145°F (63°C).
Final Finish
- Remove pork and carrots. Let meat rest for 10 minutes before slicing.
- Reduce pan juices on the stovetop until thick and syrupy. Pour over sliced meat and garnish with parsley and cracked pepper.
