Ingredients
  

  • 1 cup full-fat cottage cheese Strained if excessively watery
  • 2 large eggs
  • 1/4 tsp salt Or to taste
  • 1/4 tsp black pepper Or to taste
  • 1 tbsp almond flour Optional, for better texture

Method
 

  1. Preheat oven to 350°F (175°C). Line a standard baking sheet with parchment paper.
  2. In a blender, combine the cottage cheese, eggs, salt, pepper, and optional almond flour. Blend until completely smooth, about 30-45 seconds.
  3. Pour the batter onto the prepared baking sheet and use a spatula to spread it into a thin rectangle, approximately 1/4-inch thick.
  4. Bake for 20-25 minutes, until the top is golden brown and the center feels firm and set.
  5. Let the flatbread cool for 5-10 minutes on the pan before carefully peeling it from the parchment paper. Use as desired.
