Ingredients
  

  • 24 oz full-fat cottage cheese Straining excess liquid is optional but recommended.
  • 2 cups shredded mozzarella cheese Divided
  • 2 large eggs Lightly beaten
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup low-sugar marinara sauce
  • 1/2 cup pepperoni slices Or toppings of your choice

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease an 8x8-inch baking dish.
  2. In a medium bowl, combine the cottage cheese, 1 cup of the mozzarella cheese, the eggs, Italian seasoning, garlic powder, and onion powder. Mix until well incorporated.
  3. Spread the cottage cheese mixture evenly into the prepared baking dish.
  4. Spoon the marinara sauce over the base. Sprinkle the remaining 1 cup of mozzarella cheese on top, followed by the pepperoni slices.
  5. Bake for 25-30 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
  6. Let the bake rest for 5 minutes before slicing and serving to allow it to set.
