Equipment

  • 2 Large Mixing Bowls Stainless steel
  • 1 9x5 inch Loaf Pan Or 8x4 inch loaf pan
  • 1 Whisk For dry ingredients
  • 1 Spatula or Wooden Spoon For mixing batter
  • 1 Measuring Cups and Spoons For accurate measurements
  • 1 Paring Knife For peeling apples
  • 1 Cutting Board For dicing apples

Ingredients

Bread

  • 2 cups All-purpose flour plus extra for dusting pan
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground cloves
  • 1/2 teaspoon Salt
  • 3/4 cup Granulated sugar
  • 1/2 cup Packed light brown sugar
  • 1/2 cup Vegetable oil
  • 2 large Eggs room temperature
  • 1 teaspoon Vanilla extract
  • 1/2 cup Buttermilk or substitute
  • 2 cups Apples peeled and diced, Honeycrisp or Fuji

Fritter Swirl

  • 1/4 cup All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 2 tablespoons Unsalted butter melted

Glaze

  • 1 cup Powdered sugar
  • 2-3 tablespoons Milk or more as needed
  • 1/2 teaspoon Vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan. This prevents the bread from sticking and ensures easy removal.
  • In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Make sure everything is well combined to evenly distribute the spices.
  • In a separate large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined. This creates a moist base for the bread.
  • Beat in the eggs one at a time, then stir in the vanilla extract. Ensure each egg is fully incorporated before adding the next for a smooth batter.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix; overmixing can lead to a tough bread.
  • Gently fold in the diced apples until they are evenly distributed throughout the batter.
  • In a small bowl, combine the 1/4 cup flour, 1/4 cup sugar, and 1 teaspoon cinnamon for the swirl. Stir in the melted butter until crumbly.
  • Pour half of the batter into the prepared loaf pan. Sprinkle half of the fritter swirl mixture evenly over the batter. Pour the remaining batter over the swirl and top with the remaining fritter swirl. Use a knife or skewer to gently swirl the fritter mixture into the batter. This creates those beautiful pockets of cinnamon-sugar goodness.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Start checking for doneness around 50 minutes.
  • Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Cooling slightly in the pan helps the bread set before you remove it.
  • Once the bread is completely cool, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled bread. If you want a thicker glaze, use less milk; for a thinner glaze, add a bit more milk.
  • Slice and serve this delightful Country Apple Fritter Bread. Enjoy every delicious bite!
