- Prepare the chicken by patting it dry with paper towels. If the breasts are thick, slice them in half horizontally. Season both sides generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Place the chicken in the hot skillet and cook for 5-7 minutes per side, until golden brown and cooked through (165°F). Remove the chicken and set aside.
- Reduce the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the parsley, chives, thyme, Dijon mustard, lemon juice, lemon zest, paprika, and red pepper flakes. Simmer for 1-2 minutes to allow the flavors to meld.
- Return the chicken to the skillet. Spoon the sauce over the chicken and let it warm through for a minute before serving.
