  • 1.5 lbs Sirloin or Ribeye Steak 680g, cut into 1-inch cubes
  • 2 tbsp Avocado Oil 30ml, or other high smoke point oil
  • 1 tsp Kosher Salt To taste
  • 1/2 tsp Black Pepper Freshly cracked
  • 1/2 cup Unsalted Butter 115g, high quality
  • 4 cloves Garlic 20g, finely minced
  • 1 tsp Dijon Mustard 5g, acts as an emulsifier
  • 1/2 tsp Smoked Paprika 1g, for color and flavor
  • 1 tsp Crushed Red Pepper Flakes 2g, for heat flecks
  • 1 tbsp Lemon Juice 15ml, fresh
  • 1/4 cup Fresh Parsley 15g, finely chopped

Equipment

  • 1 12-inch Cast Iron Skillet Essential for high-heat searing and heat retention.
  • 1 Stainless Steel Tongs Used for flipping steak bites individually.

Method
 

Prep and Sear
  1. Pat the steak cubes completely dry with paper towels to ensure a dark brown caramelized crust. Season with salt and pepper.
  2. Heat oil in a cast iron skillet over medium-high heat until wisping with smoke. Add steak in a single layer.
  3. Cook undisturbed for 2 minutes, then flip and cook for 1-2 more minutes until visible sear marks and a dark crust form. Remove to a plate.
The Cowboy Butter
  1. Lower heat to medium-low. Melt butter, then whisk in Dijon mustard, smoked paprika, minced garlic, and red pepper flakes.
  2. Simmer for 60 seconds until garlic is fragrant. Stir in lemon juice and remove from heat.
  3. Toss the seared steak bites back into the glossy orange butter sauce until heavily coated. Garnish with fresh parsley.
