Prep and Sear
- Pat the steak cubes completely dry with paper towels to ensure a dark brown caramelized crust. Season with salt and pepper.
- Heat oil in a cast iron skillet over medium-high heat until wisping with smoke. Add steak in a single layer.
- Cook undisturbed for 2 minutes, then flip and cook for 1-2 more minutes until visible sear marks and a dark crust form. Remove to a plate.
The Cowboy Butter
- Lower heat to medium-low. Melt butter, then whisk in Dijon mustard, smoked paprika, minced garlic, and red pepper flakes.
- Simmer for 60 seconds until garlic is fragrant. Stir in lemon juice and remove from heat.
- Toss the seared steak bites back into the glossy orange butter sauce until heavily coated. Garnish with fresh parsley.
