- In a large skillet over medium-high heat, cook the chopped bacon until crispy. Remove with a slotted spoon to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the skillet.
- Add the chicken pieces to the skillet. Season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- Reduce heat to medium. Pour in the chicken broth, scraping up any browned bits from the pan. Whisk in the ranch seasoning, then add the cubed cream cheese. Whisk continuously until the sauce is smooth and creamy.
- Bring the sauce to a simmer and stir in the gnocchi. Cover and cook for 3-5 minutes, until the gnocchi are tender and have floated to the top.
- Uncover the skillet and stir in the cooked chicken and 1 cup of the cheddar cheese. Once the cheese is melted, remove from heat. Top with the remaining cheese, crispy bacon, and sliced green onions. Serve immediately.
