Prepare the Chicken
- Heat oil in the skillet. Pat chicken dry and sear for 3-4 minutes per side until golden-brown and fully cooked. Remove and set aside.
Build the Base
- Add mushrooms to the pan. Sauté until edges are browned and earthy. Add garlic and shallots for the final 60 seconds.
- Add dry orzo to the skillet, stirring for 2 minutes to toast. Pour in chicken broth and simmer covered for 8-10 minutes.
Finish the Sauce
- Stir in heavy cream and parmesan. Return chicken to the pan and fold in baby spinach until wilted. Garnish with parsley.
