Searing the Chicken
- Pat chicken dry and season with salt/pepper. Heat oil in skillet over medium-high. Sear chicken for 5-6 minutes until a deep golden-brown charred crust forms.
- Flip and cook for 4-5 more minutes until 165°F (74°C). Remove and let rest before slicing into strips.
Creating the Sauce
- Melt butter in the same skillet. Sauté brown mushrooms until earthy and golden. Add garlic for 30 seconds.
- Pour in chicken stock, scraping the pan. Reduce by half, then stir in heavy cream. Simmer until the sauce is thick and glossy.
Assembly
- Place sliced chicken in a matte white bowl. Drape with thick sauce and mushrooms. Heavily garnish with shredded Asiago and parsley flakes.
