  • 3 large Chicken Breasts Boneless and skinless
  • 1 tbsp Extra Virgin Olive Oil (15ml)
  • 1/2 cup Pickled Pepperoncini Peppers Sliced (65g)
  • 2 tbsp Pepperoncini Brine From the jar (30ml)
  • 1 cup Heavy Cream (240ml)
  • 1/2 cup Chicken Stock (120ml)
  • 2 cloves Garlic Mined
  • 1 tsp Dried Herb Flakes Parsley and oregano (2g)
  • 1 tsp Cracked Black Pepper Coarsely ground (2g)

Equipment

  • 1 Cast Iron Skillet A 12-inch weathered skillet is best for even searing.
  • 1 Meat Thermometer To ensure chicken reaches 165°F.

Method
 

Sear the Chicken
  1. Pat chicken breasts dry and season with salt and half of the cracked black pepper.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken for 5-6 minutes per side until a deep golden-brown crust forms. Remove and set aside.
Prepare the Sauce
  1. In the same skillet, sauté garlic in the rendered chicken fat for 30 seconds.
  2. Add chicken stock and brine, scraping the pan. Whisk in heavy cream and simmer until the ivory sauce is thick and glossy.
Finish and Garnish
  1. Return chicken to the skillet. Scatter sliced pepperoncini on top and simmer until chicken is cooked through.
  2. Finish with remaining black pepper and dried herb flakes. Look for slight oil separation as a sign of perfection.
