- Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Pat the chicken drumsticks completely dry with paper towels.
- In a small bowl, mix together the baking powder, smoked paprika, garlic powder, onion powder, salt, and pepper. In a large bowl, toss the dry drumsticks with olive oil. Sprinkle the seasoning mix over the chicken and rub to coat evenly.
- Place the seasoned drumsticks on the wire rack, making sure they are not touching.
- Bake for 20 minutes, then flip the drumsticks. Continue to bake for another 15-20 minutes, or until the skin is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before serving to allow the juices to settle.
