- Arrange three shallow dishes. In the first, combine flour, salt, and pepper. In the second, lightly beat the eggs. In the third, combine panko breadcrumbs, olive oil, paprika, garlic powder, and onion powder. Mix the panko and oil until well combined.
- Pat the chicken tenders dry. Working one at a time, coat in the flour mixture, then dip in the egg, and finally press firmly into the panko mixture to coat completely.
- Place the coated chicken tenders in a single layer on the prepared wire rack. Bake for 15-20 minutes, flipping halfway, until the chicken is cooked through and the coating is golden and crispy.
- Serve immediately with your favorite dipping sauces.
