  • 2 medium Green Bell Peppers Sliced into strips
  • 1 large White Onion Sliced into half-moons
  • 8 oz Brown Cremini Mushrooms Sliced (225g)

  • 2 cups Mozzarella Cheese Shredded (200g)
  • 2 cups Beef Broth Low sodium (480ml)
  • 1 tbsp Dried Parsley Flakes For garnish

Equipment

  • 1 6-quart Slow Cooker Ensures even heating for the sauce.
  • 1 Cast Iron Skillet For searing the beef to develop flavor.

Prep and Sear
  1. Season beef strips with salt and pepper. In a hot skillet with olive oil, sear until a deep golden-brown crust forms. Transfer to the slow cooker.

Slow Cook
  1. Add green peppers, beef broth, and cream cheese to the slow cooker. Cook on LOW for 4-5 hours or HIGH for 2-3 hours.
  2. Stir the mixture until the cream cheese is fully incorporated and the sauce is glossy.
Final Assembly
  1. Stir in the tortellini and shredded provolone. Cover and cook for 15-30 minutes until the pasta is plump and tender.
  2. Top with mozzarella cheese, cover for 5 minutes until bubbly, and sprinkle with dried parsley flakes before serving.
