Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 lbs baby Yukon Gold potatoes halved
  • 2 large carrots peeled and chopped
  • 1 medium yellow onion chopped
  • 4 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 2 tbsp fresh parsley chopped, for garnish

  • 1 Cutting Board

Method
 

  1. Place the halved potatoes, chopped carrots, and onion at the bottom of your slow cooker.
  2. Pat the chicken breasts dry. In a small bowl, mix together the Italian seasoning, smoked paprika, salt, and pepper. Rub this seasoning mixture evenly over all sides of the chicken breasts.
  3. Place the seasoned chicken breasts on top of the vegetables in the crockpot. Add the minced garlic over the chicken.
  4. In the same small bowl, whisk together the chicken broth and olive oil. Pour this mixture evenly over the chicken and vegetables.
  5. Cover the crockpot and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The chicken should be cooked through and the potatoes fork-tender.
  6. Once cooked, carefully remove the chicken and vegetables. You can serve the chicken whole or shred it. Garnish with fresh parsley before serving.
