- Place the halved potatoes, chopped carrots, and onion at the bottom of your slow cooker.
- Pat the chicken breasts dry. In a small bowl, mix together the Italian seasoning, smoked paprika, salt, and pepper. Rub this seasoning mixture evenly over all sides of the chicken breasts.
- Place the seasoned chicken breasts on top of the vegetables in the crockpot. Add the minced garlic over the chicken.
- In the same small bowl, whisk together the chicken broth and olive oil. Pour this mixture evenly over the chicken and vegetables.
- Cover the crockpot and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The chicken should be cooked through and the potatoes fork-tender.
- Once cooked, carefully remove the chicken and vegetables. You can serve the chicken whole or shred it. Garnish with fresh parsley before serving.
