- Spray the inside of a 6-quart slow cooker with non-stick cooking spray.
- Place the chicken breasts in a single layer at the bottom. Top evenly with the mixed vegetables.
- In a medium bowl, whisk together the chicken broth, softened cream cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper until the mixture is smooth.
- Pour the sauce mixture evenly over the chicken and vegetables.
- Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken is fully cooked and tender.
- Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
- Stir in 1 cup of the shredded cheddar cheese until it is melted and well combined.
- Sprinkle the remaining 1 cup of cheddar cheese over the top. Cover and cook for another 10-15 minutes, or until the cheese is completely melted and bubbly. Serve warm.
