Ingredients
  

Main Casserole
  • 1.5 lbs boneless, skinless chicken breasts about 3 medium breasts
  • 4 cups mixed vegetables e.g., broccoli florets, sliced carrots, diced bell peppers
  • 8 oz cream cheese softened
  • 1 cup chicken broth low-sodium
  • 2 cups shredded cheddar cheese divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

  • 1 Slow Cooker (6-quart)

Method
 

Cooking Instructions
  1. Spray the inside of a 6-quart slow cooker with non-stick cooking spray.
  2. Place the chicken breasts in a single layer at the bottom. Top evenly with the mixed vegetables.
  3. In a medium bowl, whisk together the chicken broth, softened cream cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper until the mixture is smooth.
  4. Pour the sauce mixture evenly over the chicken and vegetables.
  5. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken is fully cooked and tender.
  6. Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  7. Stir in 1 cup of the shredded cheddar cheese until it is melted and well combined.
  8. Sprinkle the remaining 1 cup of cheddar cheese over the top. Cover and cook for another 10-15 minutes, or until the cheese is completely melted and bubbly. Serve warm.

Notes

Tip 1: For the creamiest sauce, use a block of cheddar cheese and shred it yourself.
