Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1.5 lbs) Patted dry
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup chicken broth Low sodium recommended
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes in oil Drained and chopped, reserve 1 tbsp of oil
  • 4 cloves garlic Minced
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese Freshly grated is best
  • 2 cups fresh baby spinach
  • 1/4 cup fresh basil Chopped

Equipment

  • 1 Slow Cooker (6-quart)
  • 1 Small mixing bowl

Method
 

  1. Pat the chicken breasts dry and season both sides with salt, pepper, garlic powder, and onion powder. Place them in the bottom of your slow cooker in a single layer.
  2. In a small bowl, whisk together the chicken broth, heavy cream, minced garlic, chopped sun-dried tomatoes, 1 tablespoon of reserved tomato oil, and Italian seasoning.
  3. Pour the sauce mixture over the chicken. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is cooked through.
  4. During the last 15 minutes of cooking, stir in the grated Parmesan cheese, fresh spinach, and fresh basil. Stir until the cheese is melted and the spinach has wilted.
  5. Serve the chicken and creamy sauce hot over pasta, rice, or with crusty bread.

Notes

Tip 1: For a richer flavor, you can briefly sear the seasoned chicken breasts in a hot skillet with olive oil before adding them to the slow cooker.
