- Pat the chicken breasts dry and season both sides with salt, pepper, garlic powder, and onion powder. Place them in the bottom of your slow cooker in a single layer.
- In a small bowl, whisk together the chicken broth, heavy cream, minced garlic, chopped sun-dried tomatoes, 1 tablespoon of reserved tomato oil, and Italian seasoning.
- Pour the sauce mixture over the chicken. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is cooked through.
- During the last 15 minutes of cooking, stir in the grated Parmesan cheese, fresh spinach, and fresh basil. Stir until the cheese is melted and the spinach has wilted.
- Serve the chicken and creamy sauce hot over pasta, rice, or with crusty bread.
