Baking the Layers
- Sift together flour, black cocoa, sugar, baking powder, baking soda, and salt in a large bowl.
- Whisk eggs, buttermilk, and oil until smooth. Gradually add to dry ingredients. Stir in boiling water last.
- Divide into three 8-inch pans and bake at 350°F (175°C) for 30-35 minutes until a skewer comes out clean.
Assembly
- Trim the cooled cake tops and crumble them into irregular pieces to create 'volcanic rock'.
- Pour hot cream over chocolate chips. Let sit for 5 minutes, then whisk until glossy.
- Layer cakes with ganache. Pour remaining ganache over the top, allowing it to drip like lava. Press crumbs into the sides while wet.
