- Make a slit lengthwise down each Medjool date and remove the pit. Arrange them on a parchment-lined baking sheet.
- Spoon about one teaspoon of peanut butter into each date, then press a few roasted peanuts into the filling.
- In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring until smooth.
- Dip each stuffed date into the melted chocolate, ensuring it's fully coated. Let the excess drip off. Place back on the baking sheet, sprinkle with flaky sea salt, and refrigerate for at least 30 minutes until the chocolate is firm.
