  • 1 lb (450g) elbow macaroni dry
  • 8 large eggs hard-boiled and peeled
  • 1 cup (120g) celery finely diced
  • 1/2 cup (60g) red onion minced
  • 1.5 cups (350ml) mayonnaise full-fat
  • 3 tbsp (45g) yellow mustard
  • 1 tbsp (15ml) apple cider vinegar
  • 1 tsp (6g) sea salt
  • 1/2 tsp (1g) black pepper cracked
  • 1/2 tsp (1g) smoked paprika for garnish
  • 2 tbsp (10g) fresh chives chopped

  • 2 Mixing Bowl One large for mixing, one small for dressing
  • 1 Egg slicer For uniform garnish slices

Method
 

Preparation
  1. Boil elbow macaroni in salted water until al dente. Drain and rinse with cold water to stop cooking.
  2. Slice two hard-boiled eggs into rounds and set aside. Chop the remaining six eggs into bite-sized chunks.
  3. In a small bowl, whisk together mayonnaise, mustard, vinegar, salt, and pepper until glossy and smooth.
  4. In a large bowl, combine macaroni, chopped eggs, celery, and red onion. Fold in the dressing until well coated.
  5. Transfer to a serving bowl. Top with egg slices, a dusting of smoked paprika, and chopped chives. Chill for at least 1 hour before serving.
