Ingredients
  

For the Chicken and Rice
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 4 cups cooked rice white, brown, or quinoa
  • 3 cups steamed broccoli florets
For the Creamy Dijon Sauce
  • 1/2 cup plain Greek yogurt
  • 3 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • 1/2 tsp garlic powder
  • 2 tbsp chicken broth or water, to thin
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Season the chicken cubes with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, until golden and cooked through.
  3. In a small bowl, whisk together Greek yogurt, Dijon mustard, honey, and garlic powder.
  4. Reduce heat to low. Pour the sauce over the cooked chicken in the skillet. Add chicken broth and stir to combine. Simmer for 2-3 minutes.
  5. To assemble, divide the cooked rice among four bowls. Top with the creamy Dijon chicken and steamed broccoli.
  6. Garnish with fresh parsley and serve immediately.
