Preparation and Breading
- Pound chicken to 1/2 inch thickness. Submerge in pickle brine for 30 minutes in the refrigerator.
- Pat chicken dry. Dip in flour, then beaten egg, then the panko-parmesan mixture, pressing firmly to adhere a thick layer.
- Bake at 400°F (204°C) on a wire rack for 15-18 minutes until the panko is golden-brown and crispy.
- Top each breast with 2 slices of mozzarella and 3 pickle chips. Broil for 2-3 minutes until cheese is bubbly and white.
- Scatter fresh dill and cracked black pepper over the melted cheese before serving.
