  • 2 large Chicken Breasts boneless, skinless
  • 1/2 cup (120ml) Dill Pickle Brine from the jar
  • 1 cup (60g) Panko Breadcrumbs Japanese style
  • 1/2 cup (50g) Parmesan Cheese finely grated
  • 4 slices Mozzarella Cheese low-moisture
  • 6 chips Crinkle-Cut Dill Pickles large slices
  • 2 tbsp (8g) Fresh Dill chopped

Equipment

  • 1 Wire Cooling Rack Essential for crispy bottoms.
  • 1 Baking Sheet Rimmed sheet to catch drips.
  • 1 Meat Mallet For even thickness.

Method
 

Preparation and Breading
  1. Pound chicken to 1/2 inch thickness. Submerge in pickle brine for 30 minutes in the refrigerator.
  2. Pat chicken dry. Dip in flour, then beaten egg, then the panko-parmesan mixture, pressing firmly to adhere a thick layer.
  3. Bake at 400°F (204°C) on a wire rack for 15-18 minutes until the panko is golden-brown and crispy.
  4. Top each breast with 2 slices of mozzarella and 3 pickle chips. Broil for 2-3 minutes until cheese is bubbly and white.
  5. Scatter fresh dill and cracked black pepper over the melted cheese before serving.

Notes
