  • 2 large Hard-Boiled Eggs Chopped into small chunks
  • 1/2 cup Red Bell Pepper 75g, finely diced
  • 1/2 cup Green Celery 60g, minced
  • 1.5 cups Mayonnaise 350ml, Southern-style preferred
  • 1/2 cup Sour Cream 120ml, full-fat
  • 1 tsp Dried Dill 1g
  • 1/2 tsp Smoked Paprika 1g, for dusting
  • 2 tbsp Fresh Parsley 8g, chopped

  • 1 6-Quart Stockpot For boiling macaroni
  • 1 Fine-Mesh Colander For rinsing pasta in cold water
  • 1 White Ceramic Mixing Bowl Non-reactive for mixing dressing

Method
 

Preparation
  1. Bring salted water to a boil and cook macaroni for 7-8 minutes until perfectly al dente. Drain and rinse with cold water immediately to stop the cooking.
  2. In a small bowl, whisk together the mayonnaise, sour cream, and dried dill until it forms a thick, glossy ivory dressing.
  3. In a large ceramic bowl, fold together the cooled macaroni, diced red peppers, minced celery, and chopped hard-boiled eggs with the dressing.
  4. Smooth the top of the salad and apply a light dusting of paprika and a pinch of fresh chopped parsley.
