- Preheat oven to 375°F (190°C). Place the butter in a 9x13-inch baking dish and set it in the oven to melt. Once fully melted, remove the dish from the oven.
- In a medium bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt. Stir in the milk until just combined. Do not overmix.
- In a separate small bowl, toss the sliced peaches with the remaining 1/4 cup of sugar and the lemon juice.
- Pour the batter evenly over the melted butter in the baking dish. Do not stir.
- Spoon the peaches and their juices evenly over the batter. Do not stir.
- Bake for 40-50 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the cobbler cool for at least 10 minutes before serving. This allows the filling to set.
