  • 1.5 lbs (680g) Jumbo Shrimp tails on, deveined
  • 12 oz (340g) Andouille Sausage sliced into rounds
  • 1 lb (450g) Red Skin Potatoes halved
  • 3 ears Corn on the Cob cut into 3-inch segments
  • 1 cup (225g) Unsalted Butter melted
  • 4 tbsp (30g) Old Bay or Cajun Seasoning divided
  • 6 cloves Garlic minced
  • 2 whole Lemons one for water, one for garnish
  • 1/4 cup (10g) Fresh Parsley finely chopped

Equipment

  • 1 Large Stockpot (12-quart) Used for the main boil
  • 1 Skillet For browning the sausage

Method
 

Prepare the Boil
  1. Fill a large pot with 4 quarts (3.8L) water. Add half the seasoning, garlic, and one lemon (halved). Bring to a boil.
  2. Add halved potatoes; boil for 10 minutes. Add corn segments; boil for 5 more minutes.
  3. While veggies cook, sear sliced sausage in a skillet until edges are charred and browned.
  4. Add shrimp and seared sausage to the pot. Remove from heat, cover, and let stand for 3 minutes until shrimp are pink.
  5. Drain the pot. Melt butter with remaining seasoning and minced garlic. Toss everything in the sauce, garnish with parsley and lemon wedges.

Notes

Don't overcook the shrimp; they continue to cook in the warm butter.
