  • 12 oz Cheese Curds Fresh cheddar cheese curds, kept cold
  • 1 cup All-Purpose Flour
  • 1/4 cup Cornstarch
  • 1 tsp Baking Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Milk Or light beer
  • 3 cups Vegetable Oil For frying

  • 1 Heavy-bottomed Pot or Dutch Oven
  • 1 Slotted Spoon
  • 1 Candy/Deep-Fry Thermometer Optional but recommended

Method
 

  1. Place cheese curds on a parchment-lined baking sheet in a single layer and freeze for at least 30 minutes.
  2. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, garlic powder, paprika, salt, and pepper. Gradually whisk in the milk until the batter is smooth.
  3. Pour oil into a heavy-bottomed pot and heat over medium-high heat to 350-375°F (175-190°C).
  4. Working in small batches, dip the frozen curds into the batter to coat fully. Carefully add them to the hot oil and fry for 1-2 minutes, until golden brown and crispy.
  5. Remove the fried curds with a slotted spoon and drain on a wire rack. Serve immediately with your favorite dipping sauce.
