Method
Make the Brownie Batter
- Preheat oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, leaving an overhang.
- In a large bowl, whisk together melted butter and granulated sugar. Add eggs and egg yolk one at a time, mixing well after each. Stir in vanilla.
- In a separate bowl, whisk together flour, cocoa powder, and salt. Add dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Fold in 1/2 cup of chocolate chips. Pour batter into the prepared pan and spread evenly.
Make the Cookie Dough
- In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing on low until a dough forms.
- Stir in 1 cup of chocolate chips.
Assemble and Bake
- Drop spoonfuls of cookie dough evenly over the brownie batter.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs. The cookie top should be golden.
- Cool completely in the pan on a wire rack before lifting out and slicing into bars.

Notes
Do not overbake the brookies; this is the key to keeping the brownie layer fudgy.
Allowing the brookies to cool completely is essential for clean slices and the best texture.
