Method

Make the Brownie Batter
  1. Preheat oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk together melted butter and granulated sugar. Add eggs and egg yolk one at a time, mixing well after each. Stir in vanilla.
  3. In a separate bowl, whisk together flour, cocoa powder, and salt. Add dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  4. Fold in 1/2 cup of chocolate chips. Pour batter into the prepared pan and spread evenly.
Make the Cookie Dough
  1. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing on low until a dough forms.
  4. Stir in 1 cup of chocolate chips.
Assemble and Bake
  1. Drop spoonfuls of cookie dough evenly over the brownie batter.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs. The cookie top should be golden.
  3. Cool completely in the pan on a wire rack before lifting out and slicing into bars.

Notes

Do not overbake the brookies; this is the key to keeping the brownie layer fudgy.
Allowing the brookies to cool completely is essential for clean slices and the best texture.
